Guide VERON des Champagnes 2016
(around 47 euros per bottle)
Sober and luxurious presentation.
Aspect :
·
Golden and bright.
·
Fine effervescence.
·
Elegant bead of bubbles.
Nose :
·
Touching, source of a rare
pleasure.
·
Well defined maturity, with
captivating aromas of pastries, cocoa and roasted coffee, result of 9 years of
ageing on laths of the bottles before disgorgement.
·
The Chardonnay (50%) then
takes us into a heady farandole of scents, composed of apricot and raisin,
citrus fruits, apple and pear, underlined by an iodized and mentholated breath.
·
Fragrances of red and black
fruits, carried by delicate spices, signatures of the black varietals (41% of
Pinot Noir and 9% of Pinot Meunier).
Palate :
·
Lively attack thanks to the adjusted dosage, with only
6.5 g/L of sugar added at disgorgement, reinforced by the selection of the
purest juices (cuvée), during the
soft pressing of the grapes.
·
The mouth then becomes gentle, sensual and caressing,
enhanced by the vibrant minerality, an unforgettable characteristic sign of the
Premiers and Grands Crus of origin of the grapes (Le Mesnil-sur-Oger, Chouilly,
Mailly-Champagne, Bergères-les-Vertus, Cumières, Sacy, …), at perfect ripeness.
·
Warm finish.
·
Great length on the palate.
