Organic wine grower Récoltant Manipulant Christophe Lefèvre, AB certified by ECOCERT, cultivates 3 hectares of south facing vineyard in the Marne Valley on the Champagne tourist route producing authentic Champagnes with utmost regard for the environment.

Nose :

Tempting and intense to the nose
•
The first nose reveals notes of red fruits (blackcurrant, strawberry,
cherry...), due to the dominant presence of Pinot Meunier (60%) obtained from
very old vines.

Considerable complexity, thanks to natural vinification of the base
wines allowing the native yeasts in the grape to ferment, harmoniously combining toasted and brioche-like notes, signs of the maturity
of this Champagne obtained with lengthy ageing sur lattes for 3 years

Aromas of pear, apple, white flowers, citrus fruits, almond and
hazelnut, an expression of the 10% Chardonnay
• Left to breathe, you are rewarded with subtle hints of honey and beeswax.
Palate :

Delicious roundness, full and harmonious, expressed by the 30% Pinot
Noir, bolstered by a fresh, mineral tension obtained by a careful selection of
the free run wine at pressing (cuvée) and a deliberately low dosage
(6.5g/L of sugar added at disgorgement)

Acidulous finish, together with a delicious almondy hint
· Good length on the palate
With this Cuvée Prestige, Christophe Lefèvre signs superb traditionally blended Champagne, with 20% from 2007 and 80% from 2008. This is the result of responsible wine growing and producing, leaving the vine to take deep root using non-intervention oenology, without chaptalization, few sulphites, thus allowing the terroir of Mont de Bonneil to shine through.
Drink as an aperitif, or during a meal among friends, with poultry or white meat dishes.
