Established in 1985, the Champagne
Thiénot, the first stone of the group Thiénot which now gathers the big names
of Champagne, Bordeaux and Languedoc, relies on a 27-hectare vineyard among
which more than 13 hectares in first and grand crus, mainly planted with Pinot
Noir and Chardonnay, to develop highly expressive Champagnes.
Sober and luxurious presentation
for this cuvee created in 1997, stemming exclusively from the eponymous plot of
land of 0.5 hectares of old vines of Chardonnay (Grand Cru Avize), selected by
Garance and Stanislas who work since 2003 with their father Alain Thiénot,
founder of the house.
Visual Aspect:

White gold.
·
Fine bubbles.
·
Delicate bead of bubbles, evanescent.
Nose:
·
At
first, mysterious and sensual, it blooms slowly, ad infinitum.
·
Delicate
aromas of apple and pear compote, of crystallized citrus, apricot and white
flowers, slightly iodized, signatures of Chardonnay shot berries, harvested
very ripe (no chaptalization).
· Generous maturity, with scents of honey, gingerbread and brioche, sometimes evolving towards toast and roasted coffee, the result of 8 years of ageing on laths of the bottles before disgorgement in 2011.
Palate:

Pure
first taste, allowed by the judicious blocking of the malolactic fermentation of
the base wines wines, supported by a vibrant minerality.

The
palate then becomes fleshy and warm, underlined by the sophisticated sparkling.

Deep
finish.

Laurent Fédou, cellar master of the Champagne Thiénot, offers us a real gastronomic
Champagne, improbable balance between maturity and impudent youth.
To enjoy during a meal, after decanting, to accompany a fillet of
suckling Aubrac lamb, for example.
