Guide VERON des Champagnes 2016
(around
50 euros per bottle)
Organic Champagne
Original presentation, sober and elegant.
Aspect :
·
White gold.
·
Fine bubbles.
·
Subtle bead of bubbles.
Nose :
·
Sensual
and touching.
·
Aromas of nice ripe apple and
pear, citrus fruits and white flowers, coupled with touches of exotic fruits,
inimitable signatures of the Pinot Blanc, exclusive varietal of the cuvée, carefully harvested by hand in
2010 in the 25 years old plot “Charme de fin”.
·
Radiant maturity, enhanced by
a iodized breath, with notes of honey and caramel, barely toasted, result of
the patient ageing on laths of the bottles (4 years), before disgorgement.
Palate :
·
Classy attack, reinforced by the absence of dosage at
disgorgement (no sugar added).
·
Exceptional life force, a characteristic sign of the
terroir of the Côte des Bar transmitted by the deep rooting of the vine stocks
in a living soil.
·
Revealing the aromatic complexity already perceived at
the nose, definitely thanks to the use of the organic yeasts Quartz (alcoholic
fermentation of the base wines and prise
de mousse), selected in the vineyard of the House.
·
Impressive warmth, gentle and enveloping, to finish.
·
Remarkable length on the palate.
With this cuvée Notes Blanches Brut Nature, Jean-Sébastien Fleury, its producer, signs a rare Champagne, heady variations around the Pinot Blanc, historic varietal of Champagne and heritage of the Champagne House Fleury.
To taste
from aperitif to meal, with a soy broth sea glazed bream filet, for example.
Established
in Courteron in the heart of the Côte des Bar since 1895, creator of Champagnes
since 1929, first wine champenois
wine grower involved in Biodynamy in 1989, the Champagne House Fleury,
family-run House, is directed by the fourth generation. A desire to reduce the
environmental footprint of the vineyard of 15 hectares (work with horse) and a
creative oenologie, give birth to around 200,000 bottles per year of a range of
extraordinary Champagnes.
