Nose :

Radiant, it takes us into a
touching sensual universe, allowed by the respect of the long period between
the disgorgement and the marketing (3 to 12 months).

Aromas of red and black
fruits, discreetly underlined by soft spices, signatures of the Pinot Noir
(50%) selected in the Côte des Bar.
·
The Chardonnay (50%), chosen
in the Côte des Blancs, then unveils its whole finesse and its elegance, with
some delicate fragrances of citrus fruit, apple, pear, almond and hazelnut.

Well defined maturity, with
tasty hints of honey, evolving towards chocolate and roasted coffee, result of
7 years of ageing on laths of the bottles, before disgorgement.
Palate :
·
Classy attack, thanks to the perfect control of the
pressing of the grapes with selection of the first juices, purer, and to the
timely stop of the malolactic fermentation of 52% of the base wines.

The mouth is then radiant, to become sensual, coupled
with reserved woody notes obtained by the ageing of the expedition liqueur in
barrels.

Warm and mineral
finish.

Remarkable length on the palate.
With this Cuvée D Millésimé 2006, Michel Parisot, Chef de Cave of the Champagne House Devaux, has been able to put his oenological talent in the service of the high-level Champagne, fifth vintage of the collection D.
To taste
during meals, to accompany an entire spit roasted pigeon, for example.
Settled in a vineyard of 1400 hectares mainly located in the Côte des Bar, the Aube based union gathers 800 wine growers. 100 hectares of the best plots cultivated according to an ambitious “quality vineyard” approach in the respect of the environment, harvested and vinified separately, allow to produce around 650,000 bottles of exceptional Champagnes per year under the brand Devaux founded in 1846.
