Champagne Besserat de Bellefon – Cuvée B de B

Guide VERON des Champagnes 2016

(around 60 euros per bottle)

Numbered, original and harmonious bottle.

Aspect :

·        Pale gold, crystal clear.

·        Bubbles of a rare finesse.

·        Reserved bead of bubbles.

Nose :

·        Radiant and generous.

·        Aromas of honey and pastries, expressions of the maturity of the cuvée obtained by a patient ageing on laths of the base wines before disgorgement, supported by reserved woody notes punctuated by spices, result of the ageing of the base wines in oak barrels.

·        Fragrances of apple, citrus fruits and raisin, barely iodized and mentholated, kirsch, complete harmony between the Chardonnay (45%), the Pinot Noir (45%) and the Pinot Meunier (10%) selected in the Crus of Oger, Chouilly, Cramant, Cumières, Festigny, Ambonnay, Mailly-Champagne and Mareuil-sur-Aÿ.

Palate :

·        Chiseled attack allowed by the selection of the cuvée (first juices, purer) during the pressing of the grapes and by the stop of the malolactic fermentation of the base wines.

·        The mouth is then revealed powerful and structured, enhanced by the creamy effervescence due to the light prise de mousse, specific to the House, with only a pressure of 4.5 bar (instead of 6 bar).

·        Dense finish, mineral and spicy.

·        Infinite length on the palate.

With this restricted Cuvée B de B (less than 7,000 bottles) created in 2013 for the 170th birthday of the House, Cédric Thiébault, Chef de Cave of the Champagne House Besserat de Bellefon, offers us a genuine gastronomic Champagne, in the pure Besserat style.

To taste during a meal, with a semi-cooked wolf with scents of lemon balm and caviar, for example.

Founded in Aÿ in 1843 and integrated into the Lanson BBC Group in 2006, the Champagne House Besserat de Bellefon continues its pursuit of excellence. The House rises since 1930 to the founder challenge set by the manager of the Samaritaine de Luxe, Parisian gastronomic restaurant, producing high level Champagnes, variations inspired around finesse and elegance, strictly reserved to gastronomy, wine merchants and delicatessen shops.
