Champagne Philippe Gonet – Blanc de Blancs Brut Signature

Aspect :

·        Golden.
·        Fine bubbles.

Nose :

·        Subtle and captivating.
·        Sensual aromas of citrus fruits, apple, pear, white flowers, almond and hazelnut, invigorated by iodized and mentholated hints and by a graceful aniseed note, touching signatures of the Chardonnay, exclusive varietal of the Cuvée.
·        The Chardonnay then unveils its radiant maturity, with some scents of honey, beeswax, marzipan and caramel, barely spicy and roasted, the result of ageing on laths of the bottles before disgorgement and of blending of 70% of the base wines from 2011 and 30% of reserve wines from 10 vintages from 2001 to 2010.

Palate :

·        Lively opening, enhanced by the minerality, touching expression of the clayey-calcareous terroir of origin of the grapes (40% Grand Cru from Le Mesnil-sur-Oger and 60% from Montgueux).
·        The mouth becomes ample and generous, thanks to the judicious fulfillment of the malolactic fermentation on the base wines, underlined by the creamy effervescence.
·        Revealing the citrus fruits already perceived at the nose.
·        Tasty finish, barely spicy.
·        Good length on the palate.

This cuvée Blanc de Blancs Brut Signature gives a beautiful image of the expertise of Pierre Gonet, Chef de Cave of the Champagne House Philippe Gonet.

Ideal as an aperitif, it will accompany with joy your festive meals, with some prawns, artichokes and vintage caviar, for example.

Solicitous over the reduction of its ecological footprint, the Champagne House Philippe Gonet, settled in Le Mesnil-sur Oger since 1830, cultivates carefully its vineyard of 23 hectares composed of old vines (between 30 and 40 years old). A sustainable viticulture with plots ploughing and very limited use of pesticides and a gentle and inspired oenology, with natural flow of the musts and of the wines by gravity and parcelled vinifications, gives birth to highly expressive Champagnes, variations inspired by the terroirs of Champagne.
