Original, sober and bright presentation.
Aspect:
Golden.
Fine, dynamic and regular bubbles.
Fine bead of foam, persistent.
Nose:
Radiant and harmonious from the first nose.
Scents of red and black fruits (blackberry, redcurrant,
strawberry and raspberry), coupled with citrus fruits (lemon and grapefruit)
and peach, touching signatures of the Pinot Noir, exclusive varietal of the cuvée, harvested at perfect ripeness in
2012 on a well exposed plot of old vines (45 years old), in the terroir of Passy-Grigny in the Marne
Valley.
The nose opens up with sensual touches of caramel and
chocolate, barely roasted, translations of the well-defined maturity obtained
by 3 years of ageing on laths of the bottles, before disgorgement.
Palate:
Lively and dense opening, definitely obtained by the absence
of dosage (no sugar added at disgorgement).
The mouth is then unveiled in an explosion of flavours, deep
and generous, thanks to the judicious fulfilment of the malolactic fermentation
of the base wines, highlighted by the adjusted effervescence.
Mineral, gentle and tasty finish, punctuated by delicate
spices.
Exceptional length on the palate.
With this cuvée
Blanc de Noirs - Extra Brut - Insolent, last creation of the House in 2016,
Vanessa Maumy and Xavier Petit were able to accompany the particular
oenological alchemy to offer us an unforgettable sensorial experience.
Rare Champagne, companion of every moment, including the most
unusual, from aperitif to meal, with a « Gaston Gérard » chicken, for example.
Passionate and creative
wine growers established in Moslins, Xavier Petit and Vanessa Maumy
meticulously choose the best grapes, harvested by hand, in the 10 Crus of the
Côte of the Blancs and of the Marne Valley of their 6.5 hectares vineyard, to
produce with care an inspired range of balanced, accessible and festive
Champagnes, marketed under the brand By Fernand created in 2013, in homage to
the Vanessa’s grandfather.
