Guide VERON des Champagnes 2012

The
Gallimard family, owner of a 10 hectares vineyard, has been growing wine at the
Riceys for 5 generations. It makes its Champagne in the greatest respect of
traditions and modern oenology.
The presentation of this Champagne is feminine and
elegant.
Appearance :
- Copper-pink colour
- Plenty of fine bubbles
- Nice and brilliant
- Refined and persistent Cordon
Aroma :
- Elegant and
charming
- The first nose discloses some citrus fleeting aroma, expression of
the 10% of Chardonnay base wine judiciously blended with rosé wine
obtained by four days of a thin layer maceration of the Pinots Noirs
- Development towards happy tinges of red fruits (strawberry, blackcurrant, raspberry, cherry,…) which reveal the Riceys noble soil from which the 90% of Pinot Noir are mostly stemming from.
Taste :
- Frank attack quickly replaced by a sensuous and
hearty roundness
- The taster can find again the red fruits due to the maceration of
the Pinots Noirs in full clusters before they are crushed into the tank.
This enables the carbonic maceration phenomena in part of the berries.
- Fresh, deliciously acidulous finale completed with delicate lemon
tinges
- Amazing length on the palate.
Didier Gallimard, the maker of this
Cuvée Brut Rosé with an excellent value for money promises a Champagne with an
original and touching personality.
Ideal for the aperitif or to be served with a dessert such as a strawberry or raspberry cake or why not with a sorbet.
