Closely linked to
the history of Champagne for 12 generations, the Doyard family produces its
Champagnes with passion, with over 10 hectares of vineyard, in the cru
of Vertus, Oger, Le Mesnil sur Oger, Avize, Cramant and Aÿ.
A superb bottle. Incomparable presentation, similar to the first bottles of Champagne of the XVIII century, with a manually applied cage made of cord held in place with sealing wax.

Nose :
· Pulpy
with rare complexity, obtained by carefully blending 3 to 5 different vintages
· Initially
voluptuous, with notes of honey, beeswax, butter, caramel and white chocolate,
thanks to the lengthy ageing sur lattes of the bottles (10 years),
before disgorgement
· Sensual
scents of citrus fruits (lemon, grapefruit), apricot and peach, delicately
minty, distinctive characteristics of the Chardonnay, predominant varietal of
this cuvée
· Subtle woody notes, with a vanilla and cinnamon base, the result of partially ageing the base wines in wood
Palate :
· Sensual
and complex, round and honey-like, the result of a generous dosage, with 65g/L
of sugar added at disgorgement, in the form of a specially-produced liqueur
with cane sugar dissolved in Champagne over 20 years old stored in magnums and
jeroboams
· Wonderful
liveliness, pure and mineral, which develops little by little during tasting
· Particularly
subtle effervescence due to a pressure of only 4 bar obtained during a mastered
prise de mousse

Delicious notes of nougat, lychee, Turkish delight,
candied apple and pear
· Deliciously
acidulous and prolonged finish
· Remarkable length on the palate
With this Cuvée la Libertine that literally enchants the senses; Yannick Doyard presents a subtle indulgence, at the same time ample and silky, a true champenois jewel, and the result of 10 years of exhaustive research. It represents a unique occasion to discover what the very first Champagnes were like. An absolute must have.

with pan-fried foie gras with caramelised pineapple.
