Since 1921, within the COGEVI (Coopérative Générale de Vignerons de la Champagne), oldest cooperative of Champagne which gathers 700 wine growers, the house Collet relies on a 750-hectare vineyard distributed on 140 municipalities and on a careful vinification in small volumes (oak vats and barrels), to develop highly expressive Champagnes.

Nose:

Moving,
of a rare sensuality.

Aromas
of red berries (cherry, strawberry and raspberry), underlined by subtle spices
(liquorice, pepper and cinnamon), marked with the Pinot Noir (50%, Grand Cru Mailly-Champagne
and Louvois, and First Cru Hautvillers) and the Pinot Meunier (10%, First Cru
Ville-Dommange).

Achieved
maturity on scents of brioche and toast, evolving towards gingerbread and
chocolate, the result of 7 years of ageing on laths of the bottles, at 12°C, in
the hundred-year-old chalk cellars of Aÿ before disgorgement.

The Chardonnay
(40%, Grand Cru Louvois and Premier Cru Tauxières) unveils at last, full of elegance,
with flavours of citrus, apple and pear, delicately iodized and mentholated.
Palate:

Fleshy first taste, supported by spices and by the fine
sparkling, unctuous.

Palate becomes ample and deep.

We find the citrus evoked in nose.
·
Warm finish.
· Impressive length on the palate.
With this cuvee Esprit Couture, riddled, disgorged and packaged by hand, Sébastien Walasiak, cellar master of the Champagne Collet, composed the blend inspired by the 3 grape varieties of Champagne and 5 exceptional terroirs, to offer us an unforgettable interpretation of 2006, exclusive year of harvest of the cuvee.
Ideal to accompany your special moments, during the meal, with lake fera and extracts of liquorice for example.
