Aspect :

Golden, solar.

Nose :
·
Radiant, taking us
into a heady and endless aromatic farandole.

Sensual aromas of
candied fruits (apple, pear, peach and citrus fruits), almond and hazelnut,
signatures of the Chardonnay (35%).

The majority of
Pinot Noir (65%) then offers us its joyful fragrances of red and black fruits
compote, with delicate spices.

The well defined
maturity of the Champagne is at last revealed with some scents of honey and
pastries, result of 7 years of ageing on laths of the bottles with corks,
before disgorgement, supported by subtle woody notes obtained by the
vinification of 50% of the base wines in wood.
Palate :

Sophisticated attack, allowed by the stop
of the malolactic fermentation on the base wines and by the slight dosage with
only 4.25 g/L of sugar added at disgorgement.

The mouth is then unveiled, both powerful
and warm.
·
Tasty finish, enhanced by the tension and
the vibrant minerality.
·
Fabulous length on the palate.
Thierry Garnier, Chef de Cave of the Champagne House Philipponnat, was able to draw out the quintessence of the largest and oldest clos of Champagne (5.5 hectares) and of its extreme slopes (45°), facing south over the Marne, acquired by the House in 1935, to offer us this unforgettable Clos des Goisses Millésime 2005.
Even if it is self-sufficient, it will accompany with pleasure a fillet of duck breast with honey sauce, for example.
Established in Mareuil-sur-Aÿ since 1522, the Champagne House Philipponnat passionately cultivates its vineyard of 20 hectares with a majority of Pinot Noir.
