Guide VERON des Champagnes 2015(approximately 20 euros)
Wine grower in Cumieres, in the Marne valley, the champagne Laval Louis carries on the welcoming traditions of the Champagne region with its 3 guest rooms in the heart of the estate, and cultivates its 4.4 hectare vineyard, composed of a third of each grape varieties and set up on the south exposed regions of Cumieres, Damery and Hautvillers, in the respect of the environment, to elaborate 20 000 bottles of quality champagnes per year, the fruits of a soft and inspired oenology.
Luxurious and traditional presentation, tribute vintage to the founder of the brand in 1926, the wine grower's grand father.
Visual
aspect :
- Golden, luminous.
- Very fine bubbles.
- Refined bead.
Nose :
- Blossoming, sensual and harmonious.
- Generous aromas of apple, pear, citrus fruits and
apricot, signatures of the chardonnay harvested while mature, exclusive
grape variety of the cuvee (two thirds of the non chaptalized juices)
- The nose then reveals its maturity, with scents of caramel and honey, with a hint of vanilla, obtained by 3 years of ageing on laths.
Palate :
- Dense attack, followed by a delightful balance,
between refreshing vivacity, result of the rigorous selection of the first
juices (cuvee) during the soft pressing of the grapes and the blockage of
the malolactic fermentation on two thirds of the base wines, and an ample
and smooth voluptuousness, carried by a creamy effervescence.
- Salivating finish, deliciously slightly acid,
ever so lightly spiced (liquorice)
- Very great length in the mouth.
With this cuvee Louis Philipe, wine grower Florent Laval knew how to marry the best years (2009, 2008 and 2006 in equal proportions) and use a patient and natural oenology ( clarification of the base wines by 3 rackings, without filtration nor bonding) to give us an elegant champagne blanc de blancs, remarkable interpretation of the Cumieres region.
To enjoy from the aperitif to the meal, with a warm goat cheese salad with honey, for example.
