Set up in Etoges on the slopes of the petit Morin for several generations, the champagne Bression Sebastien cultivates its 3.4 hectare vineyard planted with 63% of chardonnais, 32% of pinot meunier and 5% of pinot noir, scattered over 5 soils (Etoges, Congy, Courjeonnet, Villevenard and Beaulne-en-Brie), to elaborate and market around 15 000 bottles per year of quality champagne.
Originale, sobre and elegant presentation.
Visual
aspect :
- Golden, brightened up with delicate tints of
green.
- Particularly fine bubbles.
- Discreet bead.
Nose :
- Harmonious and subtle.
- First distinguished by the chardonnay, main grape
variety (90%), with aromas of citrus fruits, apple and pear compote, white
flowers, peach, dried apricot and hazelnut.
- The nose then reveals progressively the rising
maturity of the champagne, with seducing nuances of fresh butter, brioche
and almond paste, results of 3 years of ageing on laths before
disgorgement.
- The patience is rewarded by the apparition of a
hint of kirsch and blackcurrant, maybe thanks to the 10% of pinot meunier.
Palate :
- Sharp attack, sustained by a dense minerality,
signatures of the chalky soils where the grapes originate from
(Courjeonnet, Congy and Beaulnes-en-Brie).
- Beautiful balance, carried by a fine effervescence.
- Warm finish, maybe allowed by the judicious
realisation of the malolactic fermentation of the base wines and by the
generous dosage, with 10g/L of added sugar during disgorgement.
- Good length in the mouth.
With this Cuvee Prestige, producer Sebastien Bression, offers us a traditional blended champagne (80% from 2009 and 20% from 2008), obtained by implementation of wine growing and rigorous oenology and respectful of the environment.
To enjoy during the aperitif or during a meal, to accompany a veal
tartare with scampi, for example.
