Nose :

and sensual.

Radiant aromas of apple and
pear compote, candied citrus fruits, apricot and raisin, almond and hazelnut,
white flowers, continuously reinvented, barely iodized and mentholated,
signatures of the Chardonnay, exclusive varietal of the cuvée.

Great maturity, due to the
long ageing on laths of the bottles before disgorgement (9 years), with
autolysis of the prise de mousse
yeasts, on joyful fragrances of brioche, beeswax, delicately toasted.
Palate :
·
Balanced and gentle attack, definitely thanks to the
judicious fulfillment of the malolactic fermentation of the base wines and to
the generous dosage, with 11 g/L of sugar added at disgorgement.
·
Beautiful density moving towards an enveloping warmth,
coupled with a touching minerality, a characteristic sign of the noble Grand
Cru terroirs (Trépail, Bouzy, Ambonnay in the Mountain of Reims ; Chouilly and
Le Mesnil-sur-Oger in the Côte des Blancs) and Premier Cru terroir (Ludes).

Dense finish, delicately acidulous, perhaps the result
of the selection of the first juices (cuvée),
purer, during the pressing of the grapes.

Great length on the palate.
With this cuvée Blanc de Blancs Millésime 2004, Elisabeth Sarcelet, Chef de Cave of the Champagne House De Castelnau, offers us an inspired interpretation of the great year 2004.
To taste
during festive meals, to accompany a red mullet with saffron, for example.
The 750 wine growers of the
Coopérative Régionale des Vins de Champagne (CRVC) carefully cultivate 900
hectares of vineyard located on 149 Crus,
and equip themselves with a production site of 5 hectares, in Reims, to produce
with passion around 400,000 bottles of quality Champagnes per year, under the
De Castelnau brand created in 2003, of which 60% are exported, mainly to United
Kingdom.
