Luxurious and festive presentation.
Aspect :

Deep colour, amber, the result of the perfect control of the maceration
of the grapes (48 to 72 hours), after a careful destemming and before
devatting.
·       
Very fine bubbles.
·       
Elegant bead of bubbles, persistent on the periphery of the flute after
service.
Nose : 
·       
Generous and radiant opening.
·       
Real
endless farandole of scents of red and black fruits, fresh and stewed
(blackcurrant, cherry, raspberry, strawberry, blackberry, plum,…), enhanced by
a joyful touch of spices (pepper, cinnamon and liquorice), signature of the
Pinot Noir (50%) and of the Pinot Meunier (50%), harvested by hand in 2011.

Patience
is rewarded by the appearance of hints of butter, walnut, almond and hazelnut.
Palate : 
·       
Frank and dense
attack.
·       
The mouth then becomes deep and ample, perhaps thanks
to the judicious fulfillment of the malolactic fermentation on the base wines
and to the dosage, with 10 g/L of sugar added at disgorgement.
·       
Revealing the red fruits already perceived at the
nose, tasty, enhanced by the dynamic effervescence.
·       
At once lively, warm and deliciously acidulous finish.
·       
Good length on the palate.
With this Rosé de
Saignée (3000 bottles per year), Lionel Chardonnet, its producer, delivers
us a Champagne rosé with character, beautiful interpretation of the terroir of
Celles-lès-Condés, exclusive origin of the grapes.
To taste
as an aperitif, or preferably during meals with friends, to go with a guinea
fowl with with fowl livers and caramelised chicory, for example.
Settled in Avize (Grand Cru) on a
vineyard of 6 hectares passionately cultivated, divided between the Côte des
Blancs (3 hectares) and Celles-lès-Condés in the Marne Valley (3 hectares), the
Champagne House Chardonnet et fils has been trying hard for 3 generations to
produce carefully and to market around 30,000 bottles of Champagnes with
personality per year, following the traditional method.
