Mythical Champagne
Luxurious bottle.
Aspect:
Gold, bright.
Delicate bubbles.
Corolla of scattered
bubbles.
Nose:
Heady and endless aromatic
waltz.
Sensual fragrances of
peach, apple and pear compote, citrus fruits and exotic fruits, enhanced by an
iodized and mentholated breath, life-giving signatures of the Chardonnay.
Slowly, the black
varietals (Pinot Noir and Meunier) establish themselves with aromas of candied
red and black fruits and kirsch, punctuated by subtle spices.
Palate:
Pure and dense at the
opening, highlighted by the joyful minerality and reinforced by the very low
dosage with only 3 g/L of sugar added at disgorgement.
Remarkable presence,
sensual and generous, enhanced by the festive effervescence, definitely the
characteristic sign of the double maturation of the wines: minimum 3 years in
vats on fine lees and 3 years in bottles with autolysis of the prise de mousse yeasts, before riddling
and disgorgement.
To finish, we find again
the red fruits already perceived at the nose.

palate.
For this cuvée Extra Brut Extra Old, Dominique
Demarville, emblematic cellar master at the top of his art, was able to select
with boldness, in the unrivalled heritage of the Champagne House Veuve Clicquot
of 400 reserve wines from 17 different years, 6 exceptional vintages (1988,
1996, 2006, 2008, 2009 and 2010), to rediscover the original purity of the
House, the very substance of the Brut Carte Jaune.
Ideal from aperitif to
meal, with a marinated gilt-head bream, beetroots and coriander pistou, for
example.
