Mythical Champagne
Emblematic presentation.

Nose:
Fascinating, radiant and
endless bouquet.
The scents of apple,
citrus fruits, apricot and grape, delicate signatures of the Chardonnay (35%),
are slowly unveiled on a bed of generous fragrances of red and black fruits,
barely spicy, characteristic sign of the majority of Pinot Noir (65%).
Later, the Champagne
House reveals its fullness with its aromas of pastries and chocolate, result of
the long ageing on laths of the bottles (10 years), at 12°C, with corks held by
a clip, in the historic cellars of the House.
Palate:
The pure tension
reinforced by the timely stop of the malolactic fermentation of the base wines
to preserve the natural acidity of the grapes, and by the adjusted dosage with
4.25 g/L of sugar added at disgorgement, gives way to an enveloping warmth,
with subtle woody notes thanks to the vinification and to the ageing in wood of
73% of the base wines.
Tasty finish,
highlighted by the particular minerality of the chalky soil of the Clos des
Goisses.

Goisses Millésime 2007, Thierry Garnier, cellar master of the Champagne House
Philipponnat, offers us a deeply radiant champagne, splendid interpretation of
this 2007 vintage with an early crop.
To taste during festive
meals, with lobster ravioles and black truffles, for example.
Anchored to the Clos des
Goisses, original plot of the House with extreme slope (45°), surrounded by
walls and south facing, the Champagne House Philipponnat has been perpetuating
in Mareuil-sur-Aÿ the family heritage passed down over the centuries since
1522. Certified Haute Valeur Environnementale and driven by a real desire to
reduce the environmental footprint, it cultivates its vineyard of 17 hectares
established in the noble terroirs of
Champagne (Aÿ, Mareuil-sur-Aÿ and Avenay-Val-d’Or) to produce with passion
authentic Champagnes.
