Guide VERON des Champagnes 2018
(around 45
euros per bottle)
Luxurious bottle,
created in 2016 for the TER collection, by moulding a bottle from the 18th century
found in 2010 in the cellars of the House dug in 1783.
Aspect:
Golden.
Delicate bubbles.
Fine bead of foam.
Nose:
Sensual aromatic breath,
enhanced by the vinification and the ageing of the base wines for 6 months in
temperature controlled casks of 60 hL.
The Chardonnay,
exclusive varietal of the Champagne, unveils touching touches of apple, pear and
candied citrus fruits driven by an iodized and mentholated breath.
Later, the radiant
maturity reveals gentle notes of pastries, barely toasted and spicy, result of
4 years of ageing on laths of the bottles before disgorgement.
Palate:
Delicious tension at the
opening, supported by the chalky minerality, highlighted by the timely stop of
the malolactic fermentation of the base wines and by the adjusted dosage with
only 3 g/L of sugar added at disgorgement.
The mouth becomes a
sensual and tasty caress.
Dense finish.
Remarkable length on the
palate.
For this champagne TER
Blanc Extra Brut, Pierre Gonet, its producer was able to orchestrate with
sensitivity the osmosis of three essential localities of Champagne, in equal
parts: Les Hautes Mottes in the Grand Cru of Le Mesnil-sur-Oger, En Vozémieux
in the Grand Cru of Oger and Les Corrigniers in the Premier Cru of Ludes.
To taste as an aperitif
ou during festive meals, with a marinated sea bass and yellow lemon, for
example.
From a long line of wine
growers, Chantal Gonet and to her brother Pierre, seventh generation, have been
perpetuating with talent the family champenois
traditions in Le Mesnil-sur-Oger. A vineyard of 19 hectares composed of 45
plots in the greatest terroirs of
Champagne, cultivated using sustainable viticulture, and a gentle and accurate
œnology with parcelled vinifications, give birth each year to around 210,000
bottles of exceptional Champagnes, to establish the signature of the Champagne
House Philippe Gonet on the best tables.
