Mythical Champagne

Nose:
Splendid, endless
aromatic journey between grace and complexity.
Fragrances of apple,
pear and candied citrus fruits, coupled with improbable touches of almond,
apricot and grape, delicate and touching harmonies of the Chardonnay carefully
harvested by hand in four of the meilleurs terroirs
of the Côte des Blancs: the Grands Crus of Avize, Le Mesnil-sur-Oger and Oger,
and the Premier Cru of Vertus.
Later, the radiant
maturity, result of 8 years of ageing on laths of the bottles before
disgorgement, gently establishes itself with its compilation of sensual scents
of pastries and honey, punctuated by touches of light tobacco and roasted
coffee.
Palate:
The fresh attack,
obtained by the selection of the first juices (cuvée), purer, during the pressing of the grapes, gives way to an
explosion of flavours, sensual firework, perfect balance, improbable and
ceaselessly renewed.
Silky finish supported
by a touch of spices, highlighted by a joyful minerality.
Fabulous length on the
palate.
With this Joyau de
France Chardonnay 2007, Christophe Roques-Boizel, cellar master of the House
Boizel, was able to reveal the nice ripe Chardonnay, to offer us a well-defined
blanc de blancs, remarkable
interpretation of a contrasting year 2007.
To taste as an aperitif
or to taste during a meal, with a lobster and spices, for example.
While the 6th generation
joined the Champagne House Boizel with the arrival of Florent and Lionel,
Evelyne and her husband Christophe perpetuates the endless quest for
excellence, true family passion started in 1834. That is how year after year,
the House selects the most beautiful grapes from the best Crus of Champagne, in
the Mountain of Reims, Côte des Blancs, Marne Valley and Côte des Bar, to
produce with accuracy around 500,000 bottles per year of exceptional
Champagnes.
