Refined and sober bottle, for this cuvée created in 1979 in homage to Louise Pommery.
Aspect:
Gold, brilliant.
Delicate effervescence.
Elegant corolla of bubbles.
Nose:
Heady aromatic harmony.
Joyful maturity, characteristic sign of 13
years of ageing on laths at constant temperature of 12 °C, with gourmet aromas
of pastries and cocoa.
Later, outstanding scents of apple and pear
compote, fig, apricot and grape, signatures of the Chardonnay, gently embrace
the generous fragrances of red and black fruits, delicious marks of the Pinot
Noir.
Palate:
Vertiginous purity at the opening, thanks to
the rigorous selection of the first juices during the soft pressing of the
grapes, and to the carefully considered dosage with only 5 g/L of sugar added
at disgorgement.
The mouth is then revealed balanced, dense
and sensual, overwhelming fullness highlighted by the silky effervescence.
Life-giving finish, glorified by the
minerality of the chalk.
Fabulous length on the palate.
With this unforgettable Cuvée Louise 2004,
Clément Pierlot, cellar master of the Champagne house Pommery, and Thierry
Gasco his predecessor, entrusted experienced pickers to harvest manually the
best grapes, at perfect ripeness, in the Grands Crus of Avize and Cramant for
the Chardonnay and of Aÿ for the Pinot Noir.
Ideal
for the aperitif and the meal, with a veal roast braised with citrus fruits,
for example.
Even though
since 2002 Paul-François Vranken presides over its destiny ot offer it an
international influence, the Champagne house Pommery remains true to the values
of Mrs Pommery who was able to impose the brand with daring, to ensure the
future of her daughter Louise. The house produces with passion exceptional
champagnes and age them in the chalk of the 18km of cellars, in the heart of
Reims, beneath the Pommery 50 hectares wine estate, modern production facility
in an unique architectural setting, absolute urban masterpiece.
