Nose:

Basket of red
and black fruits, highlighted by a mentholated breath and by touches of apple,
pear and citrus fruits, lightning signatures of the Meunier, exclusive varietal
of the champagne glorified by the talent of its producer.
Later, the cuvée reveals its maturity with sensual
touches of cocoa delicately roasted, punctuated by subtle spices, result of 5
years of ageing on laths of the bottles before riddling and disgorgement.
Palate:
Lively and
dense opening, definitely the characteristic sign of the of Eric Taillet’s
unique expertise regarding pressing of the grapes, with a particular selection
of the very first juices for their purity.
Voluptuous
balance driven by the minerality, supported by the adjusted dosage with 6 g/L
of sugar added at disgorgement as a liqueur created with vins from 2004 and
cane sugar.
Deliciously
bitter and cidulous finish, reinforced by the timely stop of the malolactic
fermentation of the base wines.
Remarkable
length on the palate.
With this cuvée Exclusiv’t, Eric Taillet reveals
the exclusive magnificent universe of the Meunier.
Champagne for all occasions, from aperitif to
meal, with a sirloin steak fried in butter or with parsley, for example.
Visionary wine growers, inspired by Burgundy,
Eric Taillet cultivates with the utmost care its vineyard of 5.75 hectares of
old vines spread around of Baslieux-sous-Châtillon, in the heart of the Marne
Valley, to preserve the original personality of the grapes. He extracts the
quintessence of the juices by a delicate pressing, vinifies them with
sensitivity separating each plot, in vats and barrels, to craft each year with
love, since 1961, rare champagnes, outstanding interpretations of the Meunier
enhanced by particular terroirs.
