refined. Agglomerated cork to ensure the absence of cork taste.
Aspect:
Gold, brilliant.
Fine bubbles.
Reserved bead of bubbles.
Nose:
Heady aromatic farandole.
The Chardonnay establishes itself full of
finesse, with scents of apple and pear compote, nice ripe citrus fruits and
white flowers.
Later, the aromas of honey and beeswax,
barely toasted and spicy, reveal a joyful maturity, result of 3 years of ageing
on laths of the bottles before riddling and disgorgement.
Palate:
Outstanding liveliness at the opening,
enhanced by the rigorous selection of the best juices (tête de cuvée) during the soft pressing of the grapes.
The mouth becomes caressing, both deep and
sensual thanks to the dosage (6 g/L of sugar added at disgorgement), reinforced
by the judicious fulfilment of the malolactic fermentation of the base wines.
Dense finish driven by the bright minerality
of the chalk and punctuated by spices.
Great length on the palate.
For this remarkable cuvée Hédoniste Blanc de Blancs Grand Cru, Vanessa Maumy and Xavier
Petit selected in 2014 the most beautiful grapes in the localities « Les
Avats » and « Les Nobiats » of the Grand Cru of Avize in the Côte des
Blancs, heritages of the maternal grandfather of Vanessa.
Ideal
as an aperitif or during meals, with dories in white wine and shellfish, for
example.
Driven by the desire to produce touching champagnes, both
authentic and festive, with a spark of imagination, Vanessa Maumy and Xavier
Petit cultivate with passion their 6.5 hectares vineyard in the greatest
respect of the environment. The best grapes of the 10 Crus of the wine estate
are carefully harvested by hand, between Côte des Blancs and Marne Valley, and
then meticulously vinified to craft with sensitivity and conviction the
singular universe of the brand By Fernand, created in 2013 in homage to Vanessa’s
grandfather.
