The Chardonnay reveals all its elegance with
its aromas of white fruits and candied citrus fruits, almond and hazelnut,
highlighted by delicate touches of exotic fruits obtained by the perfect
control of the alcoholic fermentation in the base wines.
Patience is rewarded by the appearance of
generous notes of honey and then of roasted coffee, characteristic sign of the
maturity of the champagne obtained by 4 years of ageing on laths of the bottles
before riddling and disgorgement.
Palate:
Delicious liveliness at the opening,
underlined by the timely stop of the malolactic fermentation of the base wines.
The heady tension and minerality accompany us
throughout the tasting.
Balanced and gourmet finish, highlighted by
the accurate dosage with 8 g/L of sugar added at disgorgement.
Remarkable length on the palate.
With
this Blanc de Blancs Chardonnay, Nicolas Bouché, engineer and œnologist, was able
to enhance the Chardonnay selected in the best terroirs of Champagne (Pierry, Chouilly, Sézanne, Barbonne-Fayel
and Tauxières-Mutry) to sign a touching champagne.
Ideal as an
aperitif, it is also ideal for your meals, with a variation around carrot and
cod-fish loin, for example.
Fourth generation of wine growers, Nicolas
Bouché continues the endless quest for excellence started in 1920. He
cultivates with care his 30 hectares vineyard composed of old plots (over 30
years old), established in 9 of the best Crus of Champagne. A perfect control
of each step of the champagne-making process, between manual harvest,
vinifications in small volumes per terroir,
and patient ageing of the bottles at constant temperature in the cellars of the
house, gives birth each year to around 250,000 bottles of authentic champagnes.
