Mythical champagne

Nose:
Captivating
aromatic universe.
The
scents of citrus fruits, apple, pear and white flowers, barely mentholated,
signatures of the Chardonnay (40%) harvested by hand in the Grands Crus of Oger
and Avize and the Premier Cru of Vertus in the Côte des Blancs, gently
interlace the fragrances of red and black fruits, expressions of the Pinot Noir
(60%) chosen in Mailly-Champagne (Grand Cru) and Vertus.
Later,
the fullness of the champagne is revealed with its sensual touches of honey
subtly spicy and roasted, characteristic signs of the long ageing on laths of
the bottles (13 years), reinforced by the vinification in oak barrels of 10% of
the base wines.
Palate:
Lively opening thanks to the
rigorous selection of the first juices (cuvée)
during the pressing of the grapes, and to the minimalist dosage with 3 g/L
of sugar added at disgorgement.
The gourmet gentleness takes us,
punctuated by delicious notes of exotic fruits due to the fulfilment of the
slow alcoholic fermentation of the base wines at low temperature (16 to
18 °C).
Balanced finish.
Fabulous length on the palate.
With this cuvée Joyau de France 2004, Christophe Roques-Boizel, cellar master
of the house Boizel, was able to transcend the nature of this year 2004 to sign
a masterful and bright champagne.
To taste
from aperitif to meal, with a veal Millefeuille and orange, for example.
While
Florent and Lionel Roques-Boizel, sixth generation, combine their dynamism with
the expertise of their parents Evelyne and Christophe, the Champagne house
Boizel, started in 1834, equipped itself with a new fermenting room and a new
space for customers reception, to better share the family passion for
champagne. Around 500,000 bottles of rare champagnes are crafted each year,
between vinification in small volumes, in vats or in barrels, at low
temperature and long ageing on laths.
