Harmonious and luxurious

Aspect:
Pale gold, crystal-clear.
Refined bubbles.

Nose:
Sensual and touching, source of
intense pleasure.
The bright aromas of candied
citrus fruits, apple and pear compote, delicate signatures of the Chardonnay
(70%) carefully selected in 2014 in the terroirs
of Aÿ and Bassu, underline the radiant scents of red and black fruits and
spices, expressions of the Pinot Noir (30%).
Later, the fragrances of honey
and then of cocoa and roasted coffee reveal the maturity of the champagne
obtained by 3 years of ageing of the bottles on laths, in the cellars of the
house, before riddling and disgorgement.
Palate:
Lively
opening, obtained by the rigorous selection of the first juices, purer, during
the soft pressing of the grapes harvested by hand.
The
delicious minerality gives way to a gentle and creamy caress, reinforced by the
judicious fulfilment of the malolactic fermentation of the base wines and by
the generous dosage with 10 g/L of sugar added at disgorgement.
Gourmet
finish, definitely thanks to the ageing of the reserve wines (30%) according to
the solera principle (continuous blending, for many years), œnological memory
of the wine estate, from Pinot Noir from Aÿ (Grand Cru), supported by the
seductive effervescence.
Remarkable
length on the palate.
Ideal from aperitif to meal, with
a chicken perfumed with black olives, for example.
Heir to
11 generations of wine growers, Laurent Roger has been perpetuating with
passion the family traditions in Aÿ, historic capital of the Champagne area. He
cultivates with accuracy his 7,5 hectares vineyard planted with 75% of Pinot
Noir and 25% of Chardonnay in the terroir
of Aÿ, completed by Mareuil-sur-Aÿ and Bassu, to compose each year around 33,000
heady bottles of champagnes.
