generosity, source of rare emotions.
The
aromas of red and black fruits, signatures of the Pinot Noir harvested in 2011
(50%) sensually mingle with outstanding scents of white fruits, white flowers,
characteristic signs of the Chardonnay harvested in 2012 (50%).
Later,
the maturity of the champagne is revealed with touching touches of honey and
pastries obtained by 4 years of patient ageing of the bottles.
Palate:
Brilliant
vitality at the opening, thanks to the selection of the purest juices during
the soft pressing of the grapes, reinforced by the timely stop of the
malolactic fermentation of the base wines.
The
mouth becomes sensual, supported by the dosage with 8 g/L of sugar added
at disgorgement, supported by reserved woody notes and punctuated by soft
spices, result of the vinification and then ageing of the base wines in oak
barrels.
Deliciously
acidulous finish, highlighted by the minerality of the old plots of vines
established in Grands Crus.
Endless
length on the palate.
For this heady Cuvée Antide - Grand Cru, Ingrid de Chassey, its producer, put her
feminine sensitivity in the service of the inspired blending of the varietals
and vintages.
To taste from aperitif to meal, with a poultry
escalope and cream, for example.
Established in the heart of the Mountain of Reims, the
Champagne house Guy de Chassey has been perpetuating with passion the champenois
traditions, fabulous heritages of 7 generations of wine growers. Nowadays,
Ingrid de Chassey and her mother Marie-Odile put their oenological creativity
in the service of the grapes rigorously selected in the 9.5 hectares of the
wine estate spread over the Grands Crus of Louvois and Bouzy (two thirds) and
over the Premier Cru of Tauxières-Mutry (one third) to compose each year around
60,000 bottles of exciting champagnes.
