Mythical Champagne
Located in Avize, in the heart of the Côte des
Blancs, Anselme Selosse cultivates 7.5 hectares of vineyard divided over 47
plots, passionately producing exceptional Champagne. The main part of the
vineyard is located in the Côte des Blancs, planted with Chardonnay, the
remaining consists of wonderful plots of Pinot Noir of the Mountains of Reims,
in Aÿ, Ambonnay and Mareuil-sur-Aÿ.
An original presentation for this subtle Cuvée, 600 bottles
produced per year. The label on the bottle is full of information, with the
disgorgement date written by hand certifying the lengthy period between
disgorgement and dosage, a guarantee of the optimal organoleptic quality of
this Champagne.
Appearance :
- Amber-coloured, radiant, a sign of the scorching hot 2003, the year
of harvest of the majority of grapes (completed by 2004) and location of Côte
Faron, a steep south facing plot in Aÿ (25-30% incline)
- Delicate and abundant perlage
- Fine bead
- Beautiful tears on the flute
- Limpid and intense
Nose :
- The first nose is decidedly complex, deliciously oxidative, with
notes of apple, pear, walnut and cooked prune, impressive strength, a
source of intense, alluring and fresh emotions
- Left to breathe it reveals a richness and incredible complexity,
with a true aromatic burst: blackcurrant, candied blackberry, honey,
liquorice, dried fruits (apricot, date and raisin), an expression of the
superb ripeness of the grapes and alcoholic fermentation with natural
yeasts
- Then follows subtle woody, brioche-like notes, smoky and roasted,
thanks to lengthy ageing sur lattes of the bottles before disgorgement
Palate :
- Improbable balance in the minerality enhanced by a low dosage at
disgorgement and intense, deep vinosity together with voluptuous roundness
thanks to regular bâtonnage during ageing of the base wines in
oak barrels: perhaps simply an expression of the vitality of the deeply
rooted Pinot Noir vines in the terroir of Aÿ, cultivated with
respect
- Endless finish, with spicy notes (pepper, curry, liquorice), with a
hint of walnut, raisin and apple emphasized by the effervescence
- Fabulous length on the palate
This Champagne – Aÿ Grand Cru – Extra brut of Côte Faron, is part of a
collection of 6 locations of the Jacques Selosse wine estate, reveals a very
delineated personality, incomparable and unforgettable, probably the exact
essence of the Pinot Noir of Aÿ. It is the result of years of exhaustive work
by Anselme Selosse, of vine cultivation (biodynamic agriculture, permaculture
of renowned farmer and philosopher Masanobu Fukuoka), an understanding of the
land and respect for the terroir (particularly with Claude and Lydia
Bourguignon) and oenology.
Ideal at 11°C. Delightful with gourmet meals, with poultry, such as Poulard
chicken with morels.
