Guide VERON des Champagnes 2012
(around
32 euros per bottle)
The family Cattier, located in Chigny les
Roses, in the heart of the Reims Mountain has been running since 1763 a
vineyard of 20 hectares classified Premier Cru where it has been making a
Champagne of character.
The flask of this Champagne is original with its
jewels luxurious ornament.
Appearance :
- Light yellow, luminous
- Happy sparkling
- Fine bubbles
- Closed-in
and persistent Cordon.
Aroma :
- The taster is intrigued by the first nose because
of its iodized and subtly aniseed character
- It then discloses pleasant tinges of brioche, translation of the
maturity of this blending obtained by a long ageing on lath, perfectly
mastered by its maker, Alexandre Cattier
- Overtones of lemon, grapefruit and exotic fruits which express the 30% of Chardonnay in the Cuvée blending, then of small red fruits due to the 45% of Pinot Noir and to the 25% of Pinot Meunier.
Taste :
- All in roundness, deep, sensuous, delicateley iodized in keeping
with the nose
- Aroma of cherry and quetsche
- Long, racy, precise finale strengthened by the judicious choice of no dosage, on citrus.
One is intrigued and amazed by the
great expression of this Brut Absolu of the Champagne Cattier.
To be served with the aperitif but also with a seafood dish or a red fruits dessert.
