Organic Champagne
Settled at Courteron, in the Côte des Bar, since 1895, the Champagne Fleury relies on a vineyard completely managed in biodynamics since 1992, with 15 self-owned hectares (85% of Pinot Noir, 10% of Chardonnay, 3% of Pinot Blanc and 2 % of Pinot Gris) and 8 hectares farmed by partner winegrowers. An eco-friendly vine growing, with ploughing by horse, and an inspired enology lead to the crafting of 200,000 bottles of highly expressive Champagne, of which 50% are exported.

Nose:
·
Broad and generous.
·
Blooming
maturity, with aromas of caramel, honey and gingerbread, obtained by 8 years of
ageing on laths of the bottles closed by a cork held with a staple, before
disgorgement à la volée.

Delicate
woodiness, perfectly integrated, result of the vinification and élevage of a
third of the base wines, during 9 months, in 3 to 6-year-old oak barrels.

The Pinot
Noir finally reveals with charming scents of red fruits (strawberry and
raspberry), with delicate shades of spices.
Palate:
· Pure first taste enabled by the selection of the first
juices (cuvée) during the pressing of the grapes and the moderated dosage with
only 5g/L of sugar added at disgorgement, supported by a vivid minerality,
expression of the clay and limestone soils of origin of the cuvee (90% from
Courteron and 10% from Les Riceys).

The palate reveals its heady vital force, maybe thanks
to the selection of old vines (30 years).

Exceptional length on the palate.
With this Cuvée
Boléro 2004, Jean-Sébastien Fleury, its
producer, brilliantly revives the domain’s tradition of making 100% Pinot Noir
cuvées, offering us an accomplished Champagne, and with an impudent youth.
To enjoy, during
gastronomic meals, with hare « à la royale », for example.
