Mythical Champagne

 

Winegrower in Avize since 4 generations, the Champagne De Sousa grows with passion its 9.5-hectare composed of old vines (more than 45 years on average), according to the principles of the organic and biodynamic vine growing, to elaborate and market approximately every year 85,000 bottles of exceptional Champagnes.

 

Sober and elegant presentation.


Visual aspect:

 

·        Golden, solar.

·        Very fine bubbles.

·        Generous tears.

 

Nose:

 

·        The nose opens up on an sumptuous aromatic range, creative and mischievous, with a lot of unforgettable pleasures and infinite emotions.

·        The aromas of honey, gingerbread, brioche harmoniously mingle, expressions of the cuvee’s maturity, sublimated by the delicate wood obtained by the wine making and the maturation of the base wines in oak barrels.

·        Delicate scents of white flowers, apple, peach, apricot and chestnut, moving signatures of the Chardonnay, exclusive grape variety of the Champagne, harvested manually at full ripeness, revealed by the intervention of natural yeasts of the terroir (indigenous yeasts) during the alcoholic fermentation of the base wines.

 

Paltate:

 

·        Pure first taste, with a vibrant minerality, barely salty, marked with the chalk of the plots of over-50-year-old vines, deeply rooted thanks to the plowing (sometimes with a horse) of the soils.

·        Remarkable finish, deep and sensual, because of the regular stirring of the lees in a barrel undertaken during the barrel maturation and shaking during the long ageing on laths of the bottles (6 years).

·        Exceptional length on the palate.

 

With this Cuvée des Caudalies Grand Cru Millésime 2006, Erick De Sousa, its maker, managed to practise a soft and respectful enology to offer us an unforgettable interpretation of the Grand crus of the Côte des Blancs (Avize, Oger, Le Mesnil sur Oger and Cramant).

 

To taste during a gastronomic meal, with scallops, for example.
