Settled in Avize, the Champagne De
Saint Gall is the brand of Union Champagne, established in 1966, which includes
13 cooperatives of Champagne. It relies on a 1,250-hectare vineyard, cultivated
with passion by 1,200 wine growers, exclusively located in the Premier and
Grand Crus of the Côte des Blancs and the Montagne de Reims, to develop and
market approximately 9 million bottles of highly expressive Champagnes every year.
Sober and luxurious presentation.
Visual Aspect:

Pale
gold, with discreet green tinges.

Very fine bubbles.
·
Sophisticated
bead of bubbles.
Nose:
·
It
reveals with a bit of reserve its harmonious aromatic universe.
·
Beautiful
maturity, with sensual aromas of caramel, brioche, honey and beeswax, results
of 5 years of ageing on laths of the bottles before disgorgement, with the
patient autolysis of the bottle fermentation yeasts.

Later,
the Chardonnay, noble, carefully selected in 2007 in the Premier Crus of the Côte
des Blancs, shows itself with notes of citrus, green apple, pear, white-fleshed
peach and white flowers, paired with a surprising iodized and mentholated
nuance.
Palate:

Clear,
invigorating first taste, allowed by the sensible blocking of the malolactic
fermentation of 15% of the base wines.

The
palate then expresses a delicious balance between a fleshy roundness thanks to
the generous dosage, with 10 g/L of sugar added at disgorgement, and a delightful
minerality, supported by a silky effervescence.

We
find the aromas evoked in the nose.

Elegant finish.

With this Blanc de Blancs Millésime 2007 Premier Cru, Yannick Collet, the cellar master of the Champagne De Saint Gall, offers us a remarkable interpretation of the rare terroirs of the Côte des Blancs, the real cradles of the Blanc de Blancs Champagnes.
