Guide VERON des Champagnes 2015
(approximately
16 euros)
Third generation of wine growers in Chavot-Courtcourt, the champagne J.M Tissier, established in 1931, cultivates with passion its 5.35 hectare planted with 3 grape varieties from the Champagne region and settled in Chavot-Courtcourt, Moussy, Pierry and in the Sezannais. The quest for perfection and the respect of the traditions of the Champagne region give birth to 40 000 flasks of champagne of character each year, under the brand J.M Tissier created in 1998.
Traditional and neat presentation.
Visual
aspect :
- Deep gold.
- Very fine bubbles.
- Elegant and persistent bead
Nose :
- Blossoming and delectable.
- Delightful maturity, thanks to the 3 years of
ageing on laths before disgorgement, with scents of rioche, caramel,
gingerbread and chocolate toasted and roasted in harmony.
- The chardonnay (60%), selected rigorously in the
well-situated locality of Les Crayons in Chavrot-Courtcourt, harvested at
perfect maturity, reveals itself subtly, with aromas of citrus fruits,
apple, pear, dried apricot and white flowers, only just iodised.
- Scents of red fruits and delicate spices thanks to the pinot noir (30% coming from Fontaine-Denis-Nuizy) And to the pinot meunier (10% coming from Chavrot-Courtcourt).
Palate :
- Dense and balanced attack, allowed by the perfect
mastery of the returns of the vineyard.
- The mouth then becomes tender, thanks to the
realisation of the malolactic fermentation of the base wines, served by a
smooth effervescence.
- Lively finish allowed by the selection of the first juices (cuvee), purest, during the soft pressing of the grapes, underlined by a soft minerality.
With this Cuvee Reserve Brut, producer Jacques Tissier, knew how to find the ideal marriage between the harvest years (80% from 2010 and 20% from 2009), the soils and the grape varieties, to sign a champagne of accomplished blend.
To enjoy during the aperitif or a meal, to accompany a thick-cut bass steak, for example.
