Settled in Avize since 1920, in the heart of the Cote des Blancs, the Champagne Herve Duvois cultivates with care its 7.5-hectare vineyard to elaborate and market around 25,000 bottles of quality Champagne per year.

Nose :

Enticing, all in subtlety and elegance.

At first complex, with aromas of almond, hazelnut, apple,
pear, white flowers and citrus fruits (lemon and grapefruit), inimitable
signatures of the Chardonnay, exclusive grape variety of the cuvee.
· Later, the nose reveals sensual nuances of chocolate, vanilla and cocoa, delightfully toasted and brioche-like, expressions of the Champagne's great maturity, obtained by a patient ageing on laths (4 years), with autolysis of the yeast of the bottle fermentation, in the deep chalk cellars of the estate.
Palate :

Invigorating tension from the first taste, allowed by the
judicious blockage of the malolactic fermentation of 80% of the base wines,
sustained by a distinctive minerality, mark of the soils Grand Cru soils in the
Cote des Blancs area (Avize, Oger and Cramant).

The mouth then unveils a captivating and melting warmth,
almost carnal, results of a great maturity of the grapes from the old vines (50
to 60 years old) with limited yields (80% from the 2007 harvest and 20% from
previous years).

Dense finish, elevated by a hint of pepper.
· Very great length in the mouth.
With this cuvee Blanc de Blancs Brut Reserve Grand Cru, producer Herve Dubois signs a very successful and affordable Champagne Blanc de Blancs.
To enjoy during the aperitif, or even with a starter, to accompany a selection of lobsters with a crunchy salad with a balsamic vinegar and green asparagus, for example.
