Third generation of wine growers set up in Oger, in the cote des blancs, Aurore Chapuy and Elodie Higonet-Chapuy, today at the head of Champagne Chapuy, cultivate their 8 hectare vineyard (5 hectares of chardonnay in the cote des blancs and 3 hectares of pinot noir and pinot meunier on the southern hillsides of Epernay), to elaborate and market around 80 000 bottles of grand champagnes per year.
Original, fanciful and luxurious, on a dominant of refreshing tints.
Visual
aspect :
- White gold, luminous.
- Very fine and dynamic bubbles.
- Discreet bead, persistent after service.
Nose :
- Seducing, all about elegance and subtlety.
- Romantic aromas of apple, pear, white flowers,
almond and hazelnut, signatures of the chardonnay, exclusive grape variety
of the vintage.
- The nose then reveals improbable iodised and
mentholated nuances.
- Beautiful maturity, with exhalations of honey and brioche, delicately roasted, accompanied by improbable spices, results of the patient ageing on laths.
Palate :
- Pure attack, permitted by the perfect control of
the malolactic fermentation, realised in part on the base wines, elevated
by the touching minerality of the grand cru region of Oger, sole origin of
the grapes.
- The palate then becomes sensual and caressing,
backed by a soft effervescence, thanks to the generous dosage, with 10g/L
of sugar added at disgorgement.
- Deliciously
tangy finish.
- Great length on the palate.
With this Blanc de Blancs 2008-Cuvee des Soixante ans, its producer Aurore Chapuy knew how to use an inspired and rigorous oenology, and set herself long delays between disgorgement and marketing (15 months), to offer us a blossomed champagne blanc de blancs, remarkable interpretation of the great year 2008.
To enjoy during the aperitif or during a meal, with a poulet de Bresse with cream and morels, for example.
