Aspect :

Pale gold, brilliant.

Very fine bubbles.

Nose :
·
Radiant, it immediately
reveals a joyful and sensual aromatic spectrum.
·
Hints of apple and pear
compote, with hazelnut, apricot and raisin, thanks to the Chardonnay (30%).
·
The nose becomes powerful,
with some touching notes of red fruits signatures of the Pinot Noir (70%),
underlined by delicate spices (pepper, cinnamon and liquorice) and by subtle
woody notes, the result of ageing of base wines for 4 to 6 months in small oak
barrels (around 15 years old).
·
Later, the maturity of the
Cuvée is revealed, the culmination of ageing on laths of the bottles for 5
years before disgorgement, with honey and beeswax flavours.
Palate :
·
Pure attack, reinforced by the rigorous selection of
first run wine (cuvée) during the pressing of the grapes and by the timely stop
of the malolactic fermentation of the base wines.
·
The mouth becomes deep and enveloping, enhanced by a
silky effervescence.
·
Deliciously
acidulous finish.
·
Remarkable length on the palate.
With this cuvée
Prestige Grand Cru Brut, Patrick Morieux, Chef de Cave, was able to blend wines from 2008 (2 thirds) to
reserve wines, to offer us a touching interpretation of Grands Crus vineyards
of the House Cuperly (Verzy, Verzenay, Mailly-Champagne and
Beaumont-sur-Vesle).
To taste
during a meal, with thin slices of saddle of lamb with citrus fruits and
spices, for example.
Established in Verzy, in the heart of
the Moutain of Reims, the Champagne House Cuperly carefully cultivates its
vineyard of 23 hectares, mainly located in Grands Crus and composed of 80% of
Pinot Noir and 20% of Chardonnay. A precise and gentle oenology, with
vinification and ageing of the base wines in oak barrels and the stop of the
malolactic fermentation, gives birth to around 800,000 bottles of highly
expressive Champagnes per year.
