Champagne Cattier – Blanc de Blancs Premier Cru

Guide VERON des Champagnes 2016

(around 31 euros per bottle)

Elegant white glass bottle, bright.

Aspect :

·        Pale gold, sparkling.
·        Fine and dynamic bubbles.
·        Reserved and persistent bead of bubbles.

Nose :

·        First Shy, it slowly reveals a remarkable complexity.
·        Scents of citrus fruits, peach, apple, pear, almond, hazelnut, white flowers, apricot and grapes, subtly iodized and mentholated, touching signature of the Chardonnay, exclusive varietal of the cuvée.
·        Later, the maturity of the Champagne is revealed, with gentle notes of fresh butter, honey and caramel, result of 3 years of ageing on laths of the bottles before disgorgement.

Palate :

·        Net attack, deep, allowed by the rigorous selection of the first juices (cuvée) during the soft pressing of the grapes, followed by a vibrant minerality.
·        The mouth then becomes radiant, ample and generous, thanks to the judicious fulfillment of the malolactic fermentation on the basewines, enhanced by the delicate effervescence.
·        Deliciously acidulous finish, barely spicy.

With this Blanc de Blancs Premier Cru, Alexandre and Jean-Jacques Cattier, œnologists and Chefs de Cave of the Champagne House Cattier were able to choose the best Premier Cru terroirs of the vineyard of the House (Chigny-les-Roses, Ludes, Rilly-la-Montagne and Taissy) and to blend 70% of the wines from 2010 and 30% of the reserve wines, to offer us a high level Blanc de Blancs pure Mountain of Reims.

To taste as an aperitif, but also during the meal, to accompany a herb roasted red mullet, for example.

A family-run and independent House, the Champagne House Cattier passionately cultivates a vineyard area of 33 hectares, consisting of 50% of Pinot Meunier, 25% of Pinot Noir and 25% of Chardonnay, in a continuing effort to reduce the environmental footprint (being certified Haute Valeur Environnementale). Thus, 1 million bottles of Champagne, 65% of which are exported to over 80 countries, are carefully produced, to perpetuate the Cattier style.
