Champagne Ayala – Brut Majeur

Luxurious and sober presentation, predominantly black, traditional colour of the brand.

Aspect :

·        Golden.
·        Fine and festive bubbles.
·        Elegant bead of bubbles, scattered pearls around the flute.

Nose :

·        Radiant and gourmet.
·        Joyful aromas of candied red and black fruits (raspberry, blackberry, blackcurrant, cherry and strawberry), underlined by a delicate touch of spices (liquorice, vanilla and cinnamon), touching expressions of the Pinot Noir (40%) and the Pinot Meunier (20%).
·        The Chardonnay (40%) is then slowly revealed, with some touching scents of apple, pear, apricot and white flowers, barely iodized and mentholated.

Palate :

·        Tasty attack, deep, supported by a lively and silky effervescence.
·        The mouth then reveals an enveloping warmth, caressing, with honey and beeswax, translation of the emerging maturity of the cuvée due to 3 years of ageing on laths of the bottles before disgorgement, reinforced by the judicious fulfillment of the malolactic fermentation of the base wines.
·        Deliciously acidulous finish, highlighted by a vibrant minerality.
·        Great length on the palate.

With this Brut Majeur, Caroline Latrive, Chef de Cave of the Champagne House Ayala since 2011, was able to compose the inspired blending of 25 Crus selected throughout Champagne, of the 3 champenois varietals and of vintages (75% from 2001 and 25% reserve wines from 2010 and 2009), to offer us a high-level Champagne.

To taste from aperitif to meal, to accompany a braised pigeon chest, for example.

Founded in 1860 by Edmond de Ayala, The Champagne House Ayala is one of the oldest Champagne House. The acquisition by Bollinger, in 2005, marks the beginning of a renewal, based on dynamism : new team, new production facilities, renovation of the buildings and improvement of the range. Thus 700,000 bottles of Champagnes with personality per year are produced in the historic site of Aÿ, and marketed (40% in France and 60% for exportation).
