Aspect:
Copper-coloured, bright,
thanks to the inspired osmosis between 6% of red wine produced with Pinot Noir
and 94% of white base wine.
Refined bubbles.
Fine bead of bubbles.
Nose:
Harmonious aromatic
breath which takes us into a whirl of vertiginous emotions.
The fragrances of red
and black fruits punctuated by delicate spices, signatures of the majority of
Pinot Noir (76%), gently interlace the touches of white fruits, citrus fruits
and fresh almond, barely mentholated, expressions of the Chardonnay (24%).
Palate:
Supple attack, deep and
balanced, highlighted by the tasty tension of the chalk from the Grand Cru terroir of Aÿ, with a good southern
exposure, exclusive origin of the grapes.
The mouth becomes a
sensual caress, original characteristic sign of the nourishing earth of the jar
(Tuscan pottery Terra Cotta) in which red wine has been aged.
Delicious finish, still
mineral.
Remarkable length on the
palate.
For this cuvée Dame-Jane, reference to the
Persian city of Damghan, home of wine in the fertile crescent of Mesopotamia,
Sébastien the Golvet was able to alternate with talent vinification in oak
barrels from the Argonne forest and ageing in earthenware jars, as returns to
the sources, to offer us an unforgettable experience.
To taste from aperitif
to meal, with duckling fillets, fig sauce and girolle mushrooms, for example.
