Aspect:
Pale gold, radiant.
Eminent effervescence.
Graceful bead of bubbles in corolla.
Nose:
Outstanding and touching aromatic harmony.
The scents of hazelnut and almond, barely
aniseed, slowly mingle with touches of white fruits compote, white flowers,
candied citrus fruits and of kiwi, signatures of the Chardonnay (85%) harvested
by hand in 2012, highlighted by a heady, iodized and mentholated breath.
Gentle notes of honey and caramel are then
unveiled, result of four years of patient ageing of the bottles, before manual
riddling and disgorgement.
Palate:
Splendid purity at the opening, fruit of the
accurate selection of the first juices (cuvée)
during the soft pressing of the grapes, enhanced by the timely stop of the
malolactic fermentation of the base wines.
Vertiginous minerality, characteristic sign
of the Premier Cru terroir of
Tauxières-Mutry, supported by flavours of red and black fruits, expressions of
the Pinot Noir selected in 2011.
Ample and creamy finish thanks to the
accurate dosage with 9 g/L of sugar added at disgorgement, driven by a lively
effervescence.
Remarkable length on the palate.
With this Cuvée Euphrasie, Ingrid of Chassey,
its producer, offers us a joyful champagne, between feminity and vitality.
Ideal companion for your festive moments, as
an aperitif or during a meal, with pan-fried scallops and morels, for example.
