Aspect:
Pale
gold, coupled with emerald glints.
Fine
bubbles.

bead of foam, persistent.
Nose:
Heady
and endless round of radiant aromas.
An
iodized and mentholated breath enhances the scents of nice ripe apple, pear and
citrus fruits, refined characteristic signs of the Chardonnay, exclusive
varietal of the cuvée.
Later,
the fragrances of honey and caramel punctuated by roasted hints, gently
establish themselves, results of 3 years of patient ageing of the bottles on
laths, before riddling and disgorgement.
Palate:
Lively
and mineral opening, obtained by the rigorous selection of the first juices (cuvée), purer, during the soft pressing
of the grapes harvested by hand in 2015 in the Grands Crus of Avize (with 30%
from the « Terres de Maladries ») and Le Mesnil-sur-Oger.
The
mouth becomes gentleness silky, supported by the 9 g/L of sugar added
during the dosage as an homemade expedition liqueur, carefully produced with
wine aged in oak barrels.
Balanced
finish.
Great
length on the palate.
With this cuvée OPERIS, blancs de blancs Grand
Cru, Julien and Jean-Bernard Moroy offer us a remarkable champagne, real delicacy,
between finesse and sensuality.
To taste from aperitif to meal, with a sole
and lemon sauce, for example.
Julien
Moroy, fourth generation of wine growers, alongside his parents, Estelle and
Jean-Bernard, tries its hardest to put his passion and dynamism in the service
of the family saga started in 1922. Grapes from the 12 hectares vineyard
of the house, mainly established in the Grands Crus of the Côte des Blancs
(Avize and Le Mesnil-sur-Oger) and completed by a rigorously selected supply,
are vinified with accuracy and sensitivity, to enhance the terroirs and highlight each year around 300,000 bottles of
champagnes divided into 3 new ranges.
