Aspect:
Golden.
Crystal-clear limpidity.

Nose:
Endless, generous and sensual aromatic
farandole.
Joyful scents of citrus fruits, apple and
pear compote, apricot and grape, signatures of the radiant Chardonnay,
exclusive varietal.
Later, the maturity of the cuvée is revealed with its notes of
honey and beeswax, characteristic signs of the 3 years of ageing on laths of
the bottles before riddling and disgorgement, subtly roasted thanks to the
ageing of the base wines on lees for 6 months, in 3 years old oak barrels from
the Argonne forest.
Palate:
Lively and dense opening, obtained by the
rigorous selection of the first juices, with tasting, during the soft pressing
of the grapes harvested by hand.
Tasty balance, between gentle warmth
reinforced by the fulfilment of the malolactic fermentation of the base wines
and bright minerality.
Deep finish, barely woody, deliciously
acidulous thanks to the carefully considered dosage with 7 g/L of sugar added
at disgorgement, punctuated by delicate spices.
Exceptional length on the palate.
With
this Blanc de Craie, Sébastien Le Golvet, cellar master of the Champagne house
Henri Giraud, offers us an exciting champagne, vertiginous interpretation of
the Chardonnay in the chalk of the Grands Crus of Aÿ (55%) and Louvois (45%), highlighted by an
inspired œnology.
Ideal
as an aperitif but also during a meal, with prawns, citrus fruits peel and
caviar, for example.
From
a long line of wine growers since 1625, Claude Giraud and his team put their
dynamism in the service of the excellence. Gathered around the original values
of the house, between friendliness and accepted creativity, they guide with
talent the ambition to craft rare champagnes, between noble champenois terroirs and vinifications in small containers, in oak from the
Argonne forest or in earth, for a better breathing of the wines.
