Sober and bright bottle predominantly silver coloured.
Aspect:
White
gold, crystal-clear.
Delicate
bubbles.
Refined
and persistent bead of foam.
Nose:
Elegant
and subtle, with a seductive complexity.
Radiant
aromas of citrus fruits, apple, pear and white flowers, deliciously iodized and
highlighted by a spark of fresh mint, life-giving signatures of the Chardonnay,
exclusive varietal of the champagne.
Later,
the nose is revealed warmer with touches of honey and pastries, barely spicy,
expressions of the perfectly controlled ageing of the champagne, first in vats
(6 months) on yeast lees before bottling, and then in bottles (2 years) before
riddling and disgorgement.
Palate:
Pure attack, reinforced by the rigorous
selection of the best juices during the soft pressing of the whole grapes.
Tension and chalky minerality of the Côte des
Blancs slowly step aside to give way to a generous and caressing roundness,
supported by citrus fruits.
Dense and touching finish, underlined by a
heady tension.
Remarkable length on the palate.
For this Brut Nature, Jean-Bernard Moroy,
producer and cellar master of the Champagne house Louis Massing, was able to
accompany with talent grapes carefully harvested by hand in 2013 to sign an
inspired interpretation of the soul of the Grand Cru of Avize, without the
embellishment of the dosage (no sugar added at disgorgement).
Ideal from aperitif to meal,
with blue lobster round slices, Jerusalem artichokes and pincers with citrus
fruits, for example.
