Inimitable, sober and luxurious
bottle. Very informative back label.
Aspect:
Gold.
Fine bubbles.
Corolla of scattered bubbles, distinguished.
Nose:
Radiant sensuality, enhanced by the very low
dosage of SO2 (less than 30 mg/L) and by the long period between
disgorgement and marketing.
Radiant aromas of apple and pear compote,
candied citrus fruits and white flowers, refined signatures of the Chardonnay
(95%), highlighted by an iodized and mentholated breath.
Later, the Blanc Vrai (5%) reveals its
generosity supported by the ageing on laths of the bottles for 30 months,
before riddling and disgorgement, and by the ageing of 5% of the base wines in
casks.
Palate:
Outstanding minerality at the opening,
characteristic sign of the Jurassic kimmeridgian limestone from Urville,
supported by the selection of the first juices during the pressing of the
grapes.
Remarkable presence, warm, obtained by the
judicious fulfilment of the malolactic fermentation of the base wines,
underlined by the adjusted dosage with 7 g/L of sugar added at disgorgement as
a liqueur of Chardonnay aged in wood.
Joyful finish, subtly spicy.
Endless length on the palate.
Michel Drappier was able to craft this Blanc
de Blancs with sensitivity, without filtration nor pumping, to sign a brilliant
interpretation of the Chardonnay transcended by the terroir of Urville.
To taste as an aperitif or during a meal,
with poultry cannelloni and foie gras
sauce, for example.
Settled in Urville since 1808, the Champagne
house Drappier, first Champagne house certified carbon neutral, has been
perpetuating the family passion of the Champagne area under the leadership of
Michel Drappier, now assisted by his children, Charline, Hugo and Antoine. A 60
hectares vineyard, of which one third is cultivated in organic viticulture,
completed by a supply selected in the best Crus, and a gentle œnology, give
birth each year to around 1.5 million bottles of exceptional champagnes.
