Original bottle, draped in a bright green to underline
the vegan nature.
Aspect:
Gold and crystal-clear.
Fine bubbles.
Generous tears.
Nose:
Radiant, source of intense pleasure.
Aromas of white fruits and citrus fruits,
highlighted by a mentholated breath, signatures of the white varietals (60% of
Chardonnay and 40% of Pinot Blanc) harvested fully ripe in south-facing terroirs.
Later, delicate woody notes, characteristic
sign of the ageing for 6 months of the base wines in 3 years old oak barrels,
underline the emerging maturity of the cuvée
obtained by 18 months of ageing on laths.
Palate:
Pure attack obtained by the rigorous
selection of the first juices (cuvée)
during the pressing of the grapes and by the light dosage with 3 g/L of sugar
added at disgorgement.
The mouth is revealed gourmet, supported by
the tasty minerality, the one of the soils of Celles-sur-Ource and Landreville.
Finish with an enveloping warmth, punctuated
by spices, supported by the judicious fulfilment of the malolactic fermentation
of the base wines.
Great length on the palate.
For this Cuvée Végan Extra Brut Blanc de
Blancs certified vegan by V-Label, Thomas Cheurlin offers us a champagne with a
brilliant elegance, produced in line with the vegan rules, without intervention
of animals in the vineyard or use of œnological products of animal origin.
Ideal
as an aperitif, but also during a meal, with a quinoa salad and figs, for
example.
From a long line of wine growers, Thomas Cheurlin, driven by
a real desire to reduce the environmental footprint, cultivates with passion,
in the Côte des Bar, his 22 hectares vineyard certified Terra Vitis and Haute
Valeur Environnementale. Grapes harvested by hand at perfect ripeness are
delicately pressed in the pressing centre of the Champagne house
Cheurlin-Dangin completed in 2012, and then vinified with accuracy to compose
an inspired range of authentic champagnes.
